Moroccan Lentil Salad

  1. Add all the ingredients to a large bowl and mix to combine. Divide evenly between bowls or onto plates and enjoy!
  • 2 tbsps Extra Virgin Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1/2 tsp Moroccan Spice Blend
  • 1/2 Navel Orange (juiced)
  • 1/4 cup Shallot (finely chopped)
  • 2 1/2 cups Lentils (cooked)
  • 4 stalks Celery (chopped)
  • 1/4 cup Dried Apricots (chopped)
  • 1/4 cup Almonds (toasted, chopped)
  • 1/2 cup Cilantro (chopped)



Refrigerate in an airtight container for up to three days.

Serving Size

One serving is approximately two cups.

Fresh mint, grated carrots, baby spinach, feta cheese, and/or salt and pepper.
