Peanut Sesame Potatoes

Servings: 4

  1. Boil the potatoes in water until tender, about 15 minutes. Drain and set aside.
  2. Meanwhile, pulse the peanuts, sesame seeds, turmeric, salt, garlic, ginger, and cumin in a food processor until you get a coarse mixture.
  3. Heat the oil in a large skillet until it shimmers. Add the peanut and sesame mixture and heat until fragrant, about two minutes. Add the potatoes to the skillet and stir to coat the potatoes well.
  4. Divide the potatoes evenly between plates. Squeeze the lemon overtop of the potatoes and enjoy!
