I understand that each person’s approach to lifestyle and nutrition is unique, shaped by a distinct combination of physical, biological, economic, and social factors. I am excited to learn about all the pieces that have contributed to your various hurdles and successes. This is where change begins!

Whether you are looking for a creative way to add one vegetable to your current routine, interested in designing an in-depth meal-plan, or striving to alleviate signs and symptoms of a chronic condition, I am here to listen, encourage, inform, and guide. Together, we will identify a plan and set goals so that, little by little, you can optimize your health!


Meredith has experience in outpatient nutrition and dietetics counseling and education. She loves working with adolescents and adults of all ages. She is passionate about functional nutrition and the prevention, management, and remission of chronic diseases and conditions such as diabetes, high cholesterol, and high blood pressure. She is a strong proponent of intuitive eating, integrative nutrition, and an individualized approach. 

Meredith welcomes individuals and families from diverse cultural backgrounds. She practices multicultural nutrition counseling and is always open to continuing to build her knowledge and understanding in this area through cultural humility.

Professional Qualifications

Meredith holds a Master of Science from the University of Idaho, where she completed the Coordinated Program in Dietetics while serving as a Teaching Assistant and Research Assistant. She was awarded Outstanding Dietetic Student in the Coordinated Program in Dietetics. Her thesis explored the relationship between fruit and vegetable intake and both cognitive outcomes and emotional wellbeing among college students.

She obtained dual Bachelor of Arts degrees from the University of Oregon in International Studies and Spanish with Departmental Honors. Upon graduating, she proudly served for two years in Rwanda as a Peace Corps Volunteer.

She has more than five years of experience designing and leading grocery store tours and teaching plant-based cooking classes! She has also developed and facilitated nutrition and lifestyle courses.

Personal Interests

As an avid outdoor enthusiast, some of Meredith’s favorite activities include backpacking, rock climbing, bicycling, stand-up paddle boarding, and snowshoeing. She enjoys exploring National Parks and Monuments, “roughing it” abroad, gardening, reading books and research articles, and watching documentaries. She is passionate about plant-based cooking and loves experimenting with different flavor combinations and preparation techniques.
