Hello, my name is Erica Blackburn, and I am a dietitian at Sensibly Sprouted. I am dedicated to assisting clients in enhancing their health, well-being, and overall quality of life.

My approach revolves around patient-centered care because I believe that food is a deeply personal matter, and a one-size-fits-all approach rarely works for most individuals. I firmly believe that all foods have their place on our plates, and by collaborating together, we can develop a personalized eating plan that seamlessly fits into your everyday life. Through this process, we can create strategies that will help you achieve your goals and maintain them for a lifetime.

I am a firm advocate for shifting the common perspective around food from categorizing it as “good” or “bad” to understanding how it can help us feel our best. My goal is to help you cultivate a positive relationship with food, enjoying it while also meeting your nutritional needs and aligning with your lifestyle. Together, we can delve into the scientific foundations of nutrition recommendations and dispel any misconceptions in a supportive and non-judgmental environment. My aim is to provide you with the necessary support to increase your confidence in making food and nutrition choices.

Erica is passionate about working with people to improve their health and well-being through sustainable changes. She is an expert in assisting people to prevent or manage chronic disease, restore a positive connection with food, and manage weight loss goals through nutrition education. She especially enjoys helping people identify foods that trigger gastrointestinal symptoms and create meal plans that improve their quality of life.

Professional Qualifications

Erica graduated with a Master of Science degree in Nutrition and Dietetics, and summa cum laude with a Bachelor of Science degree in Nutrition and Foods/Dietetics, both from Appalachian State University located in western North Carolina. Erica has worked as an outpatient dietitian virtually and in bariatric surgery centers since becoming a Registered Dietitian in 2021.

Personal Interests

Erica loves tending to her multitudes of houseplants, experimenting in the kitchen, exploring nature, traveling to new places, and curling up with a good book. She is always sure to include movement throughout her day, whether hitting a trail, doing pilates or yoga, or lifting weights.
